Crystals in Arizona Medjool Dates?
I'm eating these organic Arizona Medjool Dates that have been on sale at the Co-op for months; they keep moving them through. Toward the last two thirds of their life on the store shelf, they start turning lighter in color and having their skin harden and peel away from the flesh in places.
Also, these hard crystal like things form in the dates, usually close to the skin. Sometimes a mild bitterness is associated with them. Either it totally went away or I totally got used to it.
It's sort of like the hard crystals that form in good aged Gouda, only in a sugary rather than fatty medium. Is it mold?
Am I gross? It's actually really really good!
The crystals are sugar. All fruit has natural sugar in them and when they are dried the sugar will pull together and form crystals. You will experience this sometimes with raisins, typically when they are left out in the open air. I like to dry my own fruit that I grow. I try to avoid the sugar crystals during the drying process but I know if I keep them around too long they will eventually form crystals. Dried guava does this a lot.
